SMOKED MEAT SANDWICHES
*All our house made sandwiches are served with kettle chips.
Whole pork shoulder is dry cured overnight then rubbed with our specially crafted chili rub and smoked for a minimum of 12 hours.
Two boneless chicken leg quarters are marinated with lemons and herbs for 24 hours before they are smoked for 3-4 hours and grilled to finish with our house barbecue sauce.
Spicy house ground and stuffed pork links are smoked for 3 hours and finished on the grill.
*Every barbecue meat comes with our home made honey butter rolls.
SMOKED RIB PLATTER
Carrot, red paprika, cabbage, and apple mixed with our house made Tabasco vinaigrette.
Roasted skin-on potato salad with chopped herbs and hard boiled eggs, served with chipotle lime sauce and pickled mustard seeds.
House cured smoked bacon, sautéed green beans with sundried tomatoes, and fried shallot.
Grilled parmesan broccoli with sweet roasted chilis, fried capers, and lemon vinaigrette.
House smoked garlic with mashed potatoes & bacon gravy.
Stewed lentiles with mushroom and kale.
Pinto beans are braised with chilies, smoked chicken stock, bacon and brisket.
Sweet yellow corn is creamed with béchamel, cream cheese, and cheddar.
Elbow mac, roasted chile béchamel, cheddar, and pepper jack cheese.
